Brown Rice Salad with Tomato + Parmesan Cheese Almonds

This nutritious side dish or vegetarian entree is also a delicious way to work whole grains into your diet.

    2 1/4 cups water
    1 cup brown rice
    2 teaspoons coarse salt
    2 tablespoons white wine vinegar
    2 teaspoons sugar
    2 tablespoons olive oil
    1 pound grape tomatoes cut in half length-wise
    1 cup mozzarella cheese balls, drained and quartered
    1 cup fresh basil leaves, finely chopped
    1 - 4oz pouch of Sahale Crunchers - Parmesan Cheese + Herbs

Bring 2 1/4 cups water to boil in heavy medium saucepan. Mix in rice and salt. Cover, reduce heat to low and simmer until rice is tender and water is absorbed, about 40 minutes. Transfer rice to large bowl; fluff with fork and cool. (If you’re starting with cooked brown rice, use 2 cups.) Whisk vinegar and sugar in small bowl. Gradually whisk in oil. Pour over rice. Add tomatoes, cheese and basil and toss to combine. Add 3.5oz of Sahale Crunchers - Parmesan Cheese + Herbs, reserving a handful for a final topping. Season with salt and pepper. (Can be made 6 hours ahead. Cover; chill. Bring to room temperature before serving and top with remaining Sahale Crunchers - Parmesan Cheese + Herbs
